Baked Walnut-Cinnamon Apples
- 4 Apples
- 1 cup raisins
- ¼ teaspoon cinnamon
- ½ teaspoon vanilla
- ½ cup water
- ¼ cup walnuts
Heat oven to 375 F. Core and piece apples with a fork in several places around the center, to prevent them from bursting. Mix raisins, nuts, cinnamon and vanilla in a small bowl. Fill center of each apple with this mixture. Place in a glass-baking dish and pour water into pan. Cover with foil and bake about 30 minutes or until tender.
I made these tonight and they were delicious. Tastes like Apple Pie minus the guilt!

30 Days of Paleo
I've officially hit day 30 on the Paleo diet. My weight has continued to remain stable. I'm hovering at 160 to 162 lb (all fluid fluctuation, I'm sure). I started at 169 lb. I'm not having any of the side effects that I've heard of some people having (head aches, low energy, food cravings) in the first 30 days, and I feel charged during my workouts. I'm also still gaining muscle while leaning out, which was my goal all along. My plan is to go another four weeks super strict, and then to introduce the weekly "open meal" that Cordain encourages in his book on Paleo. In the mean time I've found all kinds of Paleo friendly foods, and I always feel really good about what I'm eating.
